About Smolt

WELCOME

Smolt is a restaurant after all, so let’s get straight to the plate!

Check our current menus to find innovative food prepared with a passion for the flavours of Spanish and Italian classical and contemporary cuisine.

Ingredients are sourced from local vegetable growers, farmers and cheese makers with whom we have built strong relationships and genuine partnerships. Our dishes reflect the season and support sustainable, ethical animal husbandry and fishing practices, using free range-chicken and grass-fed, ideally home-produced, beef, lamb, venison or wallaby.

We complement our food with the best of Tasmanian wines and carefully-selected national and international varieties. The wine and drinks list includes our own Sauvignon Blanc and Pinot Noir and tap beers as well as the best and latest from local brewers and cider makers. Our choice of spirits, aperitifs and soft drinks is discriminating and unusual.

You need never go hungry, whatever time of day you find us as our kitchen is open when we are open. From Monday to Friday we start with lunch from 11.30am which goes straight through to our dinner service from 5.30pm until late.  On Saturdays and Sundays we kick off breakfast at 8.00am, followed by Brunch at 10.30am and then dinner from 5.30pm until late. Plus the bar is always laden with a range of house-made cakes and snacks.

Smolt is located in the very heart of old Hobart town on Salamanca Square, a few steps down an alley off Salamanca Place, site of the famous Saturday market.  It is easy walking distance to the MONA ferry, the Museum, Mawsons Place and the destination for the Sydney/Hobart yachts.  Our map will help you find your way.

Access is easy through the underground car park off Montpellier Place and yet the restaurant is set in the tranquility of a vehicle-free plaza, reminiscent of a Continental European piazza.  It is a perfect place for people watching with children playing, tourists ambling and locals chatting in the locality known as the ‘Cottage Green’ in the 1800’s.

Seating options range from a perch at the bar or a stool at the window overlooking Salamanca Square to one of 20 tables in the heart of the restaurant.  Whether you are planning an intimate dinner, a solo lunch with a good book, a family celebration or a business function, we can help you enjoy it.  With the atrium adjacent to the main restaurant we can cater for up to 80 seated, or 250 for a stand-up event.

Smolt is designed with the style and comfort of contemporary Scandinavian chic, the charming crockery comes from the UK and the serving boards are custom-made from local timber.  Flick through The Feast for some glimpses.

Functions on or off site can be planned anywhere, any time. What is more, we now have our snazzy sister business, Smolt Kitchen, with her cheerful bistro façade backed up by a state of the art catering kitchen, to follow up on all wedding and function enquiries.  Through Smolt Restaurant, we have built an unmatched reputation for quality, flexibility and friendliness.  Rest assured, our off-site arm has gained strength, agility and capacity with the establishment of Smolt Kitchen.

The function menu options include the flavours of Frank Restaurant as well samplings inspired by Smolt.  These ‘parents’ who thrive on the Hobart waterfront, are rightly proud of their spunky West Hobart ‘offspring’.  Take a trip up to 109 Hill Street and have a look through the portholes that divide the dining area from the busyness beyond the pass. Here, metres of shiny stainless steel bench tops and capacious cool rooms offer our staff the best possible space to maintain our scrupulous standards in off-site as well as in-house cuisine.

Have a chat with a staff member in person, explore the Smolt Kitchen website or send us an email and we will tailor a package to meet your needs and your budget.  Off-site venues can be public or private.  We frequently use unique spaces such as Mawsons Place, Salamanca Arts Centre or Avalon but are just as prepared to travel to a marquee in a private country garden. Talk to our specialist staff about how our food and service can optimise the enjoyment and success of your function.

If a wedding is on the cards, the chefs based at Smolt Kitchen will ensure that your celebration is complemented by sumptuous food served with cheerfulness and efficiency.  All of the arrangements for wedding catering are made under the overall guidance and management of a specialist who is familiar with all three restaurants: Smolt, Frank and Smolt Kitchen.

The best place to start is as soon as possible with an email to our wedding coordinator who will use her compassion, skills and knowledge to support you in creating a beautiful and authentic experience.  Again, through our expanded capacity made possible through Smolt Kitchen, we are both willing and able to cater for large or small events, in a private home or at a more public venue.

Special events such as the winter wine dinners, Taste of Tasmania stall and the pop-up restaurant outside the Speigeltent all express the enthusiastic commitment of Smolt’s owners and staff to engage with what Tassie has to offer. Dealing with local suppliers is more than a handy catch cry for us.  Over the last few years we have been lucky enough to have built solid relationships with all manner of producers, growers, makers and artisans.

By embracing fairness and quality as core guiding principles, we have established some great partnerships that enable us to deliver unique results. The results of these partnerships ultimately benefit our customers, as we have access to consistently good produce, delivered with efficiency, care and goodwill from farm gate to table.

A commitment to building community and economic security in Tasmania through pride, passion and positive relationships underpins the ‘ethos’ or philosophy at Smolt (and the other members of her ‘family’: Frank and Smolt Kitchen) at every level.  Personal engagement with local producers and suppliers is a priority and the menu and wine lists celebrate the world-class quality of Tasmanian produce from land, sea and air.

Stories, comments and the latest information on who, what and where is happening on the Smolt scene can be found on The Feast, our or Facebook page.  Staff members, suppliers and customers alike come to feel part of the ‘family’ – you are most welcome to join ….
